Roasted Sweet Potatoes

Sweet potatoes are one of my favourite things to eat, especially in the cold winter months when they are easy to find at the grocery store. They are full of antioxidants, nutrients, and are high in vitamins C and E, and especially high in vitamin A. They are a little sweet, with a creamy smooth texture, and are a great alternative to regular potatoes.

My favorite way to eat them is baked, here's one of my go-to recipes. It's really simple, quick and tasty!
Here's the recipe: 
1 large, or 2 medium sweet potatoes
1/3 cup olive oil
1 tablespoon of cinnamon - this may seem weird but the cinnamon complements the sweetness of the sweet potatoes nicely
1 sprig of fresh rosemary, or a tablespoon of dried
1 tablespoon dried basil
Cayenne pepper to taste, could also use chilli peppers
Salt and pepper to taste

Directions: 
Preheat oven to 365 degrees F. Dice your sweet potato, any shape works, the smaller they are, the faster they will bake. Combine all spices, except salt, in a bowl with the oil and mix. Add the sweet potatoes to the bowl and coat them in the oil mixture. Line a baking sheet with parchment paper and spread the sweet potatoes in a single layer on the pan. Bake sweet potatoes for approximately 25-30 minutes, but this will depend on your oven and the size of your pieces. Remove from oven and salt them to taste. Serve as a snack, or a side dish for dinner :)
