Homemade Basil Mayonaise




A few weeks ago I came home from school to a surprise in the kitchen, B had made his homemade mayonnaise ( well not really a surprise, he's a pretty awesome cook!), lucky me! I usually don't like mayonnaise, but when it's homemade that's a different story! This mayonnaise is light and fresh tasting, but still creamy; the perfect dressing for an easy cabbage slaw. Recipe:
1 fresh egg yolk
1/2 lemon (juice)
2 cloves of garlic
1/4 cup white vinegar
1 teaspoon of salt
a bunch of fresh basil
Olive oil to desired consistency

Directions: 
Put the egg yolk in a stand mixer with the whisk attachment (or you can do this by hand with a whisk) and whisk until creamy, slowly drizzle the olive oil into the bowl with the whisk on until it thickens and turns in to mayonnaise (***if you add the olive oil too fast it won't thicken up and you will be left with a runny mess***). Once you have reached your desired consistency add the remaining ingredients and whisk until well combined. Enjoy on sandwiches, or as a salad dressing.
