Thai Peanut Chicken Skewers

This is probably my all time favourite recipe I have created so far. I came up with it when I was maybe around 14, and it has been a family favourite since. I can’t say it’s the healthiest recipe ever, it has some sodium in it from the soy sauce, but this can be slightly mitigated by using sodium-reduced soy sauce. Other than that, its pretty healthy and simple to make, and you can use to it to just marinate your chicken breast, or make it a little more fun by putting it on skewers.

Ingredients:
2 large chicken breasts
Ginger
2 tsp Red Chili Flakes
Half of a lemon
½ cup Peanut Butter (All-Natural)
2 tbsp water
2 tbsp Soy Sauce (Reduced Sodium)
3 cloves garlic
1 tbsp brown sugar

Step 1: Cut the chicken breasts into long, thin strips about an inch wide. Place in a bag, or in a container-whatever you use to keep chicken while it is marinating

 Step 2: In a small bowl grate the ginger, squeeze in the lemon juice, mince the garlic, and add all of the other ingredients, and whisk with a fork until smooth. Pour this mixture over the chicken and coat it well. Allow the chicken to marinate for as long as possible, minimum being an hour for the best taste

Step 3: While chicken is marinating soak around 4-6 long skewers in water, so that they will not burn when being cooked

Step 4: Once the marinating time is up, thread chicken lengthwise onto the skewers. Cook on the convection bake setting at 375 degrees for 25 minutes.
