Homemade Turkey Meat Balls in Marinara Sauce



Here's one of B's recipes that I helped him make last week- I was on meatball duty :P
It's a simple marinara sauce with delicious turkey meat balls. We make a big batch, eat it for a few days and freeze some for busy exam times. 


Here's the recipe: 
Turkey meat balls (for ~35 balls)
-3 lbs of ground turkey 
-2 eggs
-1 cup cooked oats (quick oats, or grind up whole oats a bit) 
-1 teaspoon cayenne pepper 
-1 teaspoon chilli peppers 
-fresh basil 
-3 teaspoon dried basil
-2 teaspoon dried oregano 
- salt and pepper 

Marinara sauce: 
- 4 medium onions finely chopped
-1 and a half bulbs of garlic 
-4 cans of crushed tomatoes (blend into a puree)
-8-10 mushrooms really finely chopped
-dried basil and oregano to taste
- salt and pepper to taste
-hot peppers of your choice - we used dried ghost peppers!
-olive oil 

Directions: 
Turkey meat balls: in a bowl (or mixer if you have one) combine all ingredients and mix until well combined. Form equally sized balls (the turkey is quite sticky so have a pan or plate ready). Brown the meat balls in a sauce with some olive oil ( you don't need to cook them through, this is just to crisp them up on the outside so they don't fall apart in the sauce. 
Marinara sauce: sweat onion and garlic in some olive oil, add pureed tomatoes, spices, mushrooms and meat balls and simmer over low heat for 1-2 hours. 

You can serve the sauce traditionally with spaghetti noodles, or try it with rice noodles! It was delicious!
