Dark Chocolate Cashew Cookies
Since Im really trying my best to stay away from refined sugars this month, I adapted this recipe from one I tried a few months ago here. I tried the actual recipe the first time I made them and they were delicious, but I didn't have any almonds when I made them on the weekend, so I improvised. These cookies are flour free, and made with ground up nuts and coconut! I made these with cashews, pumpkin seeds, sunflower seeds and some dark chocolate chunks and they were delicious! If you love cookies and are looking for a healthier alternative, give these a try! They are vegan and can be made gluten free too!
Here's the recipe:
1 cup of cashews
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/2 cup coconut
1/4 dark chocolate chunks
1/4 coconut oil
1/4 maple syrup
1/2 cup rolled oats
1 teaspoons vanilla
Directions:
Preheat oven to 350 degrees. Grind/blend cahews, pumpkin seeds, sunflower seeds, and coconut in a blender or food processor. Melt the coconut oil in the microwave and combine with the maple syrup and vanilla. Combine nut flour with wet ingredients, then mix in the oats and the chocolate. Form balls, flatten and place on baking sheet lined with parchment paper. Bake for 15-20 minutes. Enjoy!
